Herb-Coated Filet Mignon
8 ounces filet mignon, about 2” thick, trimmed
of fat and cut in half
1 teaspoon extra-virgin olive oil
1/8 teaspoon kosher salt
1/8 teaspoon freshly ground pepper
2 tablespoons chopped mixed fresh herbs
(chives, parsley, chervil, tarragon and/or thyme)
1 teaspoon Dijon mustard
Rub steaks with oil; sprinkle with salt and pepper.
Broil until a thermometer inserted into the steak registers 140°F for medium-rare, 15 to 20 minutes total, turning once halfway through cooking.
Transfer to a cutting board; let rest for 5 minutes.
Place herbs on a plate. Coat edges of steaks evenly with mustard; then roll edges in the herbs.

2 teaspoons extra-virgin olive oil
2 tablespoons golden raisins
1 tablespoon pine nuts
2 cloves garlic, minced
1 10-ounce bag fresh spinach
2 teaspoons balsamic vinegar
1/8 teaspoon salt
1 tablespoon shaved Parmesan cheese
Freshly ground pepper, to taste
Heat oil in a large nonstick skillet over medium highheat.
Add raisins, pine nuts, and garlic.
Cook, stirring, until fragrant, about 30 seconds.
Add spinach and cook, stirring, until just wilted, about 2 minutes.
Remove from heat. Stir in vinegar and salt.
Serve immediately, sprinkled with Parmesan and pepper.
